Black Pepper 101: Why Freshly Cracked Actually Matters
By the Agromel UK team · 26 August 2026

Black pepper's heat and aroma come from volatile oils and piperine concentrated just under the surface of the dried berry. The moment a peppercorn is cracked or ground, those oils start evaporating — pre-ground pepper on a supermarket shelf has usually lost a significant share of its aroma before it even reaches your kitchen.
Sri Lanka is one of the world's oldest pepper-growing regions, and the berries are typically sun-dried on the vine until the skin shrivels and darkens — this is what makes a peppercorn "black" rather than green or white, which are the same fruit picked or processed differently.
Buying whole and grinding to order is the single biggest upgrade available for very little effort. A basic pepper mill is enough; there's no need for anything elaborate. What matters is that the pepper is cracked close to the moment it's used, not weeks or months in advance.
Store whole peppercorns in a sealed jar away from heat and light, and they'll hold their potency for well over a year — far longer than any pre-ground pepper, which is worth remembering before buying more than you'll use in a few months.
