"True" or Ceylon cinnamon is a different species from the cassia bark sold as cinnamon in most supermarkets — thinner bark, a softer and sweeter flavour, and far lower coumarin content. Hand-peeled and rolled into quills in Galle. Grate straight into porridge, curries or mulled drinks.
