🧂 Processing

The preparation of Sri Lankan Cashew Curry begins with soaking raw cashew nuts in water for several hours or overnight to soften them. Once soaked, the cashews are boiled until tender. In a pan, mustard seeds, curry leaves, onions, green chillies, and garlic are sautéed in coconut oil to release their aroma. The softened cashews are then added along with turmeric, salt, and sometimes a bit of chilli powder. Thick coconut milk is poured in to create a rich, creamy gravy. The curry is gently simmered to allow the flavours to blend, resulting in a smooth, mildly spiced dish ready to be served with rice or traditional Sri Lankan accompaniments.
